Preheat the oven to 375 degrees
Dice up the potato into small pieces and add to a bowl, drizzle with olive oil and add in the additional spices
Cook the bacon about halfway, remove and cut into bite sized pieces
Chop up the additional veggies into bite sized pieces
Add veggies and bacon to the potato bowl and mix to disperse olive oil
Divide up the potatoes, veggies and bacon into two oven-safe skillets
Cook the skillet for about 30 minutes, mixing up the potato mixture halfway through
When you skillet has about 5 minutes left, start making your eggs. I fry my eggs in a pan by adding a little butter and oil, dropping in the eggs and letting them cook unbothered for about 3 minutes
Turn off oven, add cheese to skillet and put back in the oven to melt
Once eggs are finished, remove skillet from the oven and top with the eggs
