Mix dry ingredients together in a big bowl - flour, sugar, baking powder, salt
Add in wet ingredients - milk, egg, vanilla, oil and syrup
Set aside pancake batter and start on the filling
Melt butter and add in brown sugar and cinnamon
Mix to combine and set aside
In a small bowl - melt butter for icing
Add powdered sugar, vanilla and milk
Mix to combine
If icing is too thick, add more milk. If icing is too watery, add more powdered sugar
Add cinnamon sugar filing to plastic bag and snip off the corner of the bag to pipe the filing into the pancakes (or use a piping bag if you have one)
Add pancake batter to hot pan
Pipe cinnamon sugar filling around the pancake
Once pancake starts to bubble, flip it to other side and let it cook for about 30 seconds
Continue until all batter and filling is used
Top with icing
