Cinnamon Roll Pancakes

Ingredients

  • 1 1/2 cup All purpose flour
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 1/4 cup almond milk
  • 1 egg
  • 1 tsp vanilla
  • 3 tbsp canola oil
  • 1 tbsp syrup

Cinnamon Sugar Filling

  • 1/2 stick melted butter
  • 2/3 cup brown sugar
  • 1 tbsp cinnamon

Icing

  • 1 tbsp melted butter
  • 2/3 cup powdered sugar
  • 1/2 tsp vanilla
  • 1 tbsp almond milk

Instructions

  • Mix dry ingredients together in a big bowl – flour, sugar, baking powder, salt
  • Add in wet ingredients – milk, egg, vanilla, oil and syrup
  • Set aside pancake batter and start on the filling
  • Melt butter and add in brown sugar and cinnamon
  • Mix to combine and set aside
  • In a small bowl – melt butter for icing
  • Add powdered sugar, vanilla and milk
  • Mix to combine
  • If icing is too thick, add more milk. If icing is too watery, add more powdered sugar
  • Add cinnamon sugar filing to plastic bag and snip off the corner of the bag to pipe the filing into the pancakes (or use a piping bag if you have one)
  • Add pancake batter to hot pan
  • Pipe cinnamon sugar filling around the pancake
  • Once pancake starts to bubble, flip it to other side and let it cook for about 30 seconds
  • Continue until all batter and filling is used
  • Top with icing
  • Enjoy

I am SO tired of being stuck inside and it is day 6? day7? But, I will say it is forcing me to be more creative with my cooking, use of leftovers and recipe development which is fun. This morning I wanted something sweet and thought why not try to make cinnamon roll pancakes and I am GLAD I did.

These are so tasty and actually pretty easy. I used almond milk because I rarely have regular milk, but I think whatever milk you have on hand will work. My unsweetened vanilla almond milk worked perfectly.

The batter is straightforward and so is the filling. The icing may need some modifications depending on what you like. If you like it thicker, add more powder…if you like it thinner add more milk.

The most challenging part of this recipe was swirling the cinnamon filling. I put my filling into a plastic bag, cut off the corner to make a little piping bag. After I added the pancake batter to the pan, I would try to do a little swirl of the mix. The mix is thicker so its not the easiest to make a swirl of but mine turned out just fine! Next time I might try adding it to the center and then using a toothpick to swirl throughout.

Flip the pancakes when they start to bubble, the sugar and the cinnamon mixture will start to melt and that is okay! they will be SO tasty and gooey. They don’t take long to cook on the other side so just let it do its thing for a minute or so and then they are done!

Add the icing over the top and enjoy!! Let me know what you think!
