This recipe is going to be a bit misleading, because you should use whatever you have in the fridge. There really aren’t any ingredients that don’t belong in this dish. The 3 main things that are a must have, in my opinion, are potatoes, eggs and cheese. Any other veggie or meat you add is obviously only going to make it more delicious, but to make a skillet you really only need potatoes, eggs and cheese. Breakfast Skillet
Ingredients
- 1 large potatoes
- 1/2 red onion
- 1 bell pepper
- 1 jalapeno
- 2 slices of bacon
- 2 eggs
- 1/2 cup shredded cheese
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp oregano
- 1/2 tsp garlic powder
Instructions
- Preheat the oven to 375 degrees
- Dice up the potato into small pieces and add to a bowl, drizzle with olive oil and add in the additional spices
- Cook the bacon about halfway, remove and cut into bite sized pieces
- Chop up the additional veggies into bite sized pieces
- Add veggies and bacon to the potato bowl and mix to disperse olive oil
- Divide up the potatoes, veggies and bacon into two oven-safe skillets
- Cook the skillet for about 30 minutes, mixing up the potato mixture halfway through
- When you skillet has about 5 minutes left, start making your eggs. I fry my eggs in a pan by adding a little butter and oil, dropping in the eggs and letting them cook unbothered for about 3 minutes
- Turn off oven, add cheese to skillet and put back in the oven to melt
- Once eggs are finished, remove skillet from the oven and top with the eggs
Other skillet ideas:
- Jalapeno popper skillet – jalapenos, bacon, cream cheese, onion
- Veggie skillet – broccoli, onion, tomatoes, bell peppers
- Mexican skillet – black beans, hominy, jalapenos, corn, peppers
I love love love this breakfast for cleaning out my fridge, it is SO easy and such a good way to use up any leftover veggies that you don’t want going to waste.
I like to cook my eggs separately while my veggies cook but I am pretty sure you could also crack your eggs on top of the skillet and then put it back in the oven until the egg whites are set – this would make less of a mess. I plan on trying this next time I make a skillet.
